The Chinese culinary influence remains in the Capital and the Northern Highlands, but the dishes are truly Vietnamese. In this class we will prepare some old Hanoian favorites like caramel pork but will also explore some lesser known dishes from the highlands.

In the sleepy town of Phan Thiet and the island of Phu Quoc it is the production of fish sauce that dominates not only the town’s business activities but the very air that you breathe. There is no escaping the pungent and, to the Vietnamese, comforting aroma of the fish sauce. There is not a lot of agriculture on the southern coast so menus feature heavily around fish, rice, and the use of aromatics and spices. Come and enjoy with us.

On the hot and humid summer days in Viet Nam there is always the faint smell of smoke in the air coming from the countless charcoal braziers on which family and restaurant meals are prepared.

9.40am | Brief introduction to Vietnamese cuisine, highlighting the contents of tradition meal. |
9.50am | Take a short walk to the Chau Long Market – Enjoy a tour of the market highlighting the ‘wet’ / unusual fruits / livestock / silk worms, with HCC chefs*lots ofopportunities to take photos |
10.20am | Back to HCC and commence cooking class with HCC chefs* take homeprinted recipes as well as samples of some local fruit, green bean cake, quail eggs, etc. |
12.00pm | On completion of the cooking class, enjoy the meal and a chance to chat with Tracey Lister and Linh* relax in the comfort of the HCC dining area and enjoy a local beer or wine or lemon juice |
1.00pm | Finish Class* receive going home gift and visit the HCC shop with Vietnamese Culinary tools, books, spices etc available for purchase |

9.40am. | Take a pleasant stroll from the HCC to Truc Bach Lake for your first tasting – Pho Cuon*lots of opportunities to take photos |
10.15am. | Next stop Chau Long Market, for a tour of the market highlighting the ‘wet’ / unusual fruits / livestock / frogs.*sample of market foods of your choice. For example tree tomatoes or green mango with chili, silkworms, pork with green rice. |
11.00am. | Next stop Tay Ho. We will take taxi to West Lake shrimp restaurants to sample West Lake’s most famous dish. |
11.45am. | Back into the taxi and off to Xuan Dieu for one of the best Bun Cha stalls in Ha Noi*enjoy Bun Cha, grilled pork patties and pork belly with sticky rice noodles |
12.15pm. | On our way back we stop at Yen Phu to visit a *traditional Ha Noi café, established in 1936.* enjoy specialties of the café, black sticky rice or green rice with yoghurt. Coffee with yoghurt or great passionfruit with yoghurt |
1.00pm | Back to HCC and relax in the HCC courtyard café* receive going home gift and visit the HCC shop with Vietnamese Culinary tools / books/ spices etc available for purchase |
